This is a spicy, tangy treat which can be served in many ways. It is perfect for any time of the day and is a popular Ghanaian party food.
3 lbs. (6 large) plantains, 1 tsp. powdered ginger, 1/2 tsp. salt, 1/2 tsp. ground red pepper, 2 tbls. water, 3 cups oil
Wash and peel plantains. Cut crosswise / slanted into 1/2 inch slices. Mix ginger, salt, and red peper with water. Drop plantain slices into mixture and stir around with fingers coating the plantains. Place in hot oil and deep-fry until golden brown. Serves 6
